Makhana seeds come from the prickly water lily plant, which grows in stagnant water or ponds, primarily in the Bihar region of India. The process of harvesting and preparing them is highly labor-intensive: the seeds are collected from the bottom of the pond, washed, sun-dried, and then roasted at high temperatures until they "pop" like popcorn, revealing the white, fluffy puff we recognize.
